Hello. So I have been working in a company where I am the juniormost of the 3 content writers. Long story short, the work which can be done solely through 2 content writers, I been feeling like a wasted employee who is just there to work when the other 2 writers are absent. Its not even a year since I joined. What should I do?

Let your company decide how many people they want in the team. They may be having expansion plan or just keeping a back up.

My suggestion would be please focus on creating and delivering value to the organisation and maintain good healthy professional relationships with your colleagues. Keep enhancing your skills and most important have a life outside of work.
