Dear Madam, leafy greens we should eat raw or cooked to get best out of it?

Ans: Leafy greens are an important source of fiber, rich in vitamins and minerals such as Vitamin A, Vitamin C, iron, magnesium, potassium and calcium, has a high antioxidant content and boosts your immune system. Some leafy greens like lettuce, spinach, cabbage, broccoli and collard greens can be enjoyed raw in dishes like soups, salads and wraps. Eating raw leafy vegetables can be healthy and nutritious as they are rich in essential vitamins, minerals, and dietary fiber. But some like cauliflower, brussels and sprouts should be restrained in consuming it in a raw form as it may cause gastrointestinal issues. Incorporating a variety of leafy vegetables into your diet, both raw and cooked, can provide a wide range of nutrients and health benefits. If you have specific dietary concerns or health conditions, it is better to consider a nutrition/diet consultant or a professional in the field.

what is millets, is it healthy? So to avoid rice, dals after millets?

Ans: Millets are a type of crop (seeds), with different varieties grown across various regions. They are filled with nutrients including vitamins, fats, proteins and other minerals. Our traditional meals across regions included millets as a staple eg. ragi, jowari, bajra, etc. While we can draw comparisons with other grains, a healthier practice is to consume all different grains in regulated quantities as per the season. Also note - not to consume multi-grain flours, breads, etc, as they get difficult to digest; and lastly avoid refined grains eg. maida, white corn flour, etc.

Ans: There are multiple options like Kokum, Lemon, Tamarind and if you are looking for thickness in gravy you can use Pumpkin, Capsicum. Cooking is an art as well as a science, the more you learn about the ingredient the more options you will have.

I am diabetic since 20 years. Advised not to have root vegitables. if so which ones to be totally avided. if boiled ones can be taken lke curry sambar etc in lieu of raw vegetables

Ans: Well, anything with fibres and less carbohydrate is good.
Avoid Potato, Sweet Potato and beet roots.

Boiling or raw doesnt make big difference.

Requesting you not to panic at this early stage. Let her appear for JEE session 2 and the state-level engineering entrance test. Let all the results out. You have ample time to think about the available options for engineering admission. At this stage, no need to think about management quota unless and until you want a particular branch in a particular college. Depending on her score in upcoming exams, she may get admission to reputed engineering either in Pune or Bengaluru
