What, apart from money, attracts people to working in business (corporates, start-ups et al) as opposed to academia, arts, research, etc?

Ans: Hello Anonymous - excellent question ! This is a because historically, the nation has laid a lot of focus on economy growth via business, corporates and off late - startups. It requires grass root level change in the way we perceive the later, which, unfortunately are classified as hobbies alone. If you're looking at a shorter answer which is the real truth - its the money !
