My gums bleed slightly when I brush, even though I use a soft-bristled toothbrush. Does this mean that I may have early-stage gum disease?

From your symptoms it appears that there's a low grade infection somewhere. Since you cannot precisely pinpoint which tooth is paining a full jaw Xray (called an OPG) may also be necessary in order to reach a proper diagnosis.
Once the affected tooth/teeth are identified and the appropriate treatment done you should be able to eat and drink comfortably.
